Preparing and baking pizza: Gi.Metal's essentials

It's easy to say pizza! Although it is a simple dish, its preparation is by no means clear-cut. Certainly, quality ingredients are needed, but also skill and the right tools to master them, especially in the preparation and baking stages.

For this reason, Gi.Metal provides all its experience to provide pizza makers with functional and high-performance equipment. Let's now take a look at the main stages of pizza preparation and baking, and what tools are needed for a mouth-watering result.

1.The rising of the dough

First of all, the dough must be prepared. The ingredients are few - flour, water, salt and yeast - but they must be mixed and managed wisely. In this sense, proper leavening is the first secret for an optimal result. In fact, the dough must rise for several hours, preferably in suitable containers for the prepared quantity, in order to obtain dough balls of the right consistency.

2.Cutting the dough balls

Once the dough has risen, it must be cut into balls of the correct size. For a perfect cut, you need to use an appropriate dough cutter, preferably one that is comfortable to hold and capable of cutting cleanly and precisely.

3.Transferring the dough balls

Similarly, moving the dough balls for processing requires great precision and appropriate equipment. Our flexible spatula meets these requirements, as it can fit perfectly under the balls to lift and separate them quickly and precisely.

4.The pizza topping

Now the dough ball is ready to be worked into a disc of dough, which is then seasoned with the chosen ingredients. Tomato, mozzarella and basil, if good quality, are by themselves the protagonists of a pizza that is as simple as it is tasty. To complete the seasoning, a drizzle of extra virgin olive oil is the perfect touch. It is even better if poured with a professional oil cruet, which allows the right amount of oil to be distributed.

5.Placing the pizza in the oven

It’s time to bake! For classic pizza-making, the WoodTech peel is the answer. The perforated peel head allows for ideal flour release and guarantees great smoothness, in both round and rectangular versions. The anodised aluminium provides lightness, strength and manageability, simplifying the pizza chef's work and optimising time. Final touch for lovers of classic aesthetics: an elegant oak effect on the handle.

6.Taking the pizza out of the oven

Once the baking phase is over, the small peel is the most suitable tool for taking the pizza out of the oven. The stainless steel head and handle give lightness and strength, reducing the heat transmittance of the oven. The intermediate polymer handle, on the other hand, allows for more convenient handling of the small peel.

7. Cleaning the oven

Finally, keeping the oven clean is essential through the removal of food residues, flour or ash between baking. For this purpose, the most suitable tool is a professional brush with brass bristles and a stainless steel back scraper to remove residues left on the oven floor. The brass bristles enable fast and more efficient cleaning of the refractory stone. Choosing a brush with a swivel head, on the other hand, allows you to reach every area of the oven for more thorough hygiene of the cooking space.
